Blistered Jimmy Nardello and Corn Salad

This recipe might be hard to say three times fast, but it’s beyond delicious and packed with health benefits. How? Why? Say more? ACC supports heart and gut health, while the corn and Jimmy Nardello peppers provide fiber and antioxidants that promote digestion and reduce inflammation.

Ingredients

Main
Corn (either canned and drained, or about 3 cobs)2 cups
Jimmy Nardello Peppers (sweet Italian peppers)½ lb
Algae Cooking Club Oil2 tbsp
Roughly chopped parsley (or basil)½ cup
Lime Juice1 lime
Salt and pepperTo taste
Step 1

Heat 1 tbsp ACC over medium-high heat. Add corn and cook, stirring occasionally, until blistered and charred, about 6 minutes.

Step 2

Heat 2 tbsp ACC over high heat in a cast iron skillet. Add peppers and cook until charred, turning every 3 minutes. Set aside. 


Step 3

Heat 2 tbsp ACC over high heat in a cast iron skillet. Add peppers and cook until charred, turning every 3 minutes. Set aside

Step 4

Once peppers are cooled, slice crosswise into ringlets. Toss in a large bowl with corn and parsley. Add lime juice, salt, and pepper, and toss again. Adjust seasoning to taste.
