Corn Cake with Creme Fraiche Whip and Berries

This corn cake leans into summer’s sweetness without overdoing it, it's moist, golden, and just savory enough to make the berries and creme fraîche whip shine.

Ingredients

Main
Corn cake made with Algae Cooking Club, halved and baked in a 8” pan
Strawberries, quartered1/2 pint
Sugar, for the strawberries1-2 tbsp
Vanilla bean paste, divided1 tsp
Heavy whipping cream1/2 cup
Creme fraiche2 tbsp
Sugar, for the whip1 1/2 tbsp
Salt
Step 1

Add your strawberries, 1-2 tbsp sugar, ½ tsp vanilla bean paste, and a pinch of salt to a bowl.

Step 2

Stir to combine and set aside until juicy, around 30 minutes.

Step 3

Meanwhile, make your whip by whipping the cream, creme fraiche, sugar, remaining ½ tsp vanilla bean paste, and a pinch of salt until it holds medium peaks.

Step 4

Top your prepared corn cake with the whip, strawberries, and strawberry juice.

Step 5

Serve immediately.
