Watermelon, cut into chunks5 lbs
Juice of 2-3 limes
Sugar⅓ cup
Pinch salt
Algae Cooking Club gochugaru chili oil
Lime zest
Step 1
Blend your watermelon, lime juice, sugar, and a pinch of salt until smooth, with no chunks. Blend in batches if needed.
Step 2
Pour into a 9x13 inch dish (or any large baking dish) and freeze 2-3 hours, or until the top half is set. Scrape with a fork all over and freeze again for another 2-3 hours. Repeat the scraping process until you have a shaved ice consistency. You may need another round or freezing and scraping before it is ready, depending on the temperature of your freezer.
Step 3
Once the ice is fully shaved, scoop into cups and top with zest and chili oil. Freeze remaining granita in an airproof container.
