Watermelon, Fennel & Feta Summer Salad

This salad is summer in a bowl, it's sweet, snappy, and just a little bit fancy. The watermelon’s working hard, the fennel’s keeping it crisp, and the feta’s here for a salty little undertone.

Ingredients

Main
Small watermelon, cubed1/2
Small fennel bulb, very thinly sliced1 pc
Sugar snap peas, blanched and thinly sliced1 cup
Small handful of fresh mint leaves, torn
Feta cheese, crumbled3 tbsp
Sumac or chili flakes, to finish
Dressing
Champagne vinegar2 tbsp
Lemon juice1 tbsp
Honey1 1/2 tsp
Salt and pepper, to taste
Algae Cooking Club cooking oil3 tbsp
Step 1

Whisk together dressing ingredients until combined. Taste and add more salt, if needed.

Step 2

In a large bowl, gently combine the watermelon, fennel, snap peas, and mint, and then sprinkle the feta over top.

Step 3

Drizzle over the dressing and finish with sumac or chili flakes.

Step 4

Serve immediately, or chill until serving.
