Smoked Tomato Oil Martini

This Tomato Martini recipe turns peak-season sungold tomatoes into a savory, silky cocktail. Fresh muddled tomatoes shaken with vodka and lemon juice, then finished with a splash of Algae Cooking Club Smoked Tomato Oil. 

Part martini, part liquid caprese, it's an easy showstopper for summer entertaining, aperitivo hour, or any excuse to drink your tomatoes. Just a shaker, fresh produce, and five minutes.

Vodka2 oz
Ripe sungold or cherry tomatoes (plus one for garnish)3–4
Fresh lemon juice½ oz
Simple syrup (optional, to taste)¼ oz
Algae Cooking Club Smoked Tomato OilA splash
SaltA pinch
IceFor shaker
Step 1

Muddle the tomatoes in a cocktail shaker until fully crushed and juicy. Add the vodka, lemon juice, and a small pinch of salt.

Step 2

Fill the shaker with ice and shake hard for 15–20 seconds, until well chilled.

Step 3

Double strain into a chilled martini glass to catch the tomato pulp and seeds.

Step 4

Finish with a splash of Smoked Tomato Oil. It'll pool on the surface in golden droplets and carry the aroma straight to your first sip. Garnish with a tomato on a pick.
