Mushroom Martini

Ingredients

Main
Mushroom oil fat-washed gin2 oz
Dry vermouth (or blanc vermouth for softer roundness)½ oz
Dry sherry½ oz
Orange bitters (optional, brightens earthiness)1 dash
Algae Cooking Club mushroom oil
Step 1

Combine all ingredients over ice in a large glass.

Step 2

Stir vigorously.

Step 3

To fat wash your gin, add 6 parts gin to every one part mushroom oil.

Step 4

Shake well, cover, and let sit at room temp for a minimum of 6 hours, up to a couple of days. Freeze overnight.

Step 5

When ready to use, pop the frozen oil cap off the top and discard. If you have remaining oil spots in your gin, strain through a cheesecloth.

Step 6

Pour into a chilled martini glass and finish with a few drops of Algae Mushroom Oil.
