
Restaurant Level Broccolini
Elevate your broccolini with this recipe that'll delivers perfectly tender stalks with a perfect char and bold garlic-lemon flavor. This quick and easy broccolini method combines blanching and pan-searing for that crisp-tender texture you expect from top-tier restaurants.
Finished with golden garlic, red pepper flakes, and fresh lemon juice, it’s the perfect side dish that’s simple but packed with flavor(!)
Ingredients
Set a large pot of heavily salted water to boil. While the water heats up, trim the ends off your broccolini and prepare an ice bath.
Once the water is boiling, blanch the broccolini by cooking it in the boiling water for 1-2 minutes, until bright green.
Immediately transfer to the ice bath to stop the cooking process. Dry thoroughly with a tea towel.
Heat a large pan over medium high, preferably a cast iron.
Once the pan is hot, add a thin layer of algae oil across the base. When the oil starts to shimmer, add the broccolini and some salt. Cook undisturbed until a char forms, about two minutes.
Flip the broccolini and cook the other side. After a few minutes, reduce the heat to medium low and add in your garlic and red pepper flakes.
Cook for a few minutes until very fragrant, and your garlic turns golden. Turn off the heat and squeeze the juice of a quarter lemon over top.
Transfer to a plate with the garlic slices and red pepper flakes and serve warm.
