Peanut Miso Soba Noodles

Peanut Miso Soba Noodles present a harmonious blend of rich, savory, and slightly sweet flavors, creating a dish that's as nourishing as it is delicious. The soba noodles, made from buckwheat, offer a pleasingly nutty base that's both hearty and wholesome, enveloped in a creamy, umami-packed sauce that marries the earthy depth of miso with the comforting, smooth richness of peanut butter.

Smooth Peanut Butter½ cup
Miso1 tsp
Algae Cooking Club Oil⅛ cup
Brown Sugar⅛ cup
Light Soy Sauce¼ cup
Peeled and Grated Ginger1 tbsp
Sliced Scallion¼ cup
Julienned Carrot¼ cup
Chopped Cilantro2 tbsp
Rice Vinegar1 tbsp
Red Chili Flakes1 tsp
Salt, to taste
Soba Noodles8 oz
Step 1

Clean and cut your vegetables and herbs. Grate the peeled ginger with a microplane.

Step 2

Mix the peanut butter with ACC oil, miso, brown sugar, soy sauce, rice vinegar, and red chili flakes.

Step 3

Cook, cool, and drain your noodles using the instructions on the package.

Step 4

When ready to serve, mix all of the vegetables with the noodles and add the peanut miso sauce as desired. Add salt to taste and more herbs for an extra garnish.
