Healthy-ish Buffalo Cauliflower

Ingredients

Healthy-ish Buffalo Cauliflower
Large head cauliflower, cut into bite-size florets1
All-purpose flour¼ cup
Cornstarch¼ cup
Water or milk½ cup
Garlic powder1 tsp
Hot paprika½ tsp
Onion powder½ tsp
Salt½ tsp
Black pepper¼ tsp
Algae oilfor shallow frying
Hot sauce (I like Frank’s)¼ cup
Melted butter2 tbsp
Step 1

In a bowl, whisk together the flour, cornstarch, water/milk, spices, salt, and pepper until smooth. You want it thin enough to drip, but thick enough to cling.

Step 2

Heat a skillet over medium high heat until the oil shimmers across the surface.

Step 3

While the oil heats, add the cauliflower florets and toss until evenly coated. Let the excess drip off. Add to the pan with the hot oil, being careful not to crowd the pan, and cook 2 - 4 minutes per side, until golden brown all over. You will know they are ready to flip when they release from the bottom of the pan.

Step 4

Add to a wire rack lined pan to cool. While cooling, make your buffalo sauce.

Step 5

Add the butter to a small pan and heat over low until melted. Add the hot sauce and mix until the butter and hot sauce come together into a smooth sauce.

Step 6

Add your cooked cauliflower to a large bowl and pour the sauce over. Toss to coat. Serve immediately.
