
Fried Egg Yolk Toasts

Ingredients
Spread breadcrumbs onto a small plate or tray. Carefully separate the egg yolks and place them onto the breadcrumbs. Cover completely with breadcrumbs, then freeze for 30 minutes.
Heat algae oil in a small pan or pot to 350°F. While the oil heats, toast the sourdough in a pan with a little algae oil until golden brown.
Fry the breaded egg yolks for 15–20 seconds per side, just until crisp. Avoid overcooking or the yolks will lose their runny center.
Transfer yolks to a paper towel-lined plate to drain excess oil.
Assemble the toasts with prosciutto, burrata, and fried egg yolks. Finish with chopped chives and serve immediately.
